Perfect Protein Pancakes

Hello everyone and welcome to my blog! After finally plucking up the courage to start a food instagram (@essentially.emma) a few months ago, I decided that it was time to create a blog to share my recipes. So here we are, I hope you enjoy this space and if you would like to know a bit more about me and my story, head over to my About page. 

Protein pancakes are a dream, there is no doubt about it. You feel like you are getting a treat at your favourite breakfast spot when in reality, you are fuelling yourself with a healthy, protein-packed breakfast. I love having these on the weekend before my Saturday morning workout and they have become something that I look forward to on a Friday night! I have spent a while experimenting with recipes to find something that has a great texture, tastes nice and is healthy. This recipe has a great nutritional profile and is yummy and easy to make.

 

Perfect Protein Pancakes                                                                                              

Serves: 1           

Time: 20 min                                                                                                                                     

 

Ingredients:

40g whole oats

1/2 banana

1 scoop protein powder (I use vanilla)

1 egg

50ml milk (I use almond)

1/4 tsp baking powder

 

Method:

1. It's easy - just put all of the ingredients in to a blender and whizz them up until the batter is smooth

2. If your batter seems a bit thick, add a dash more milk

3. Heat a drizzle of coconut oil in a non-stick frying pan over medium heat 

4. Pour or spoon about 2-3 tbsp of batter per pancake, using the back of a spoon to spread and shape your pancake
5. If you want to add some any filling to your pancakes, sprinkle them on top now

6. Cook for 2 min on each side or until they are lightly bronzed (I cook 2 in a pan at a time)

7. Repeat until you have used the batter up! I get about 4-6 per batch.

8. Top with anything your heart desires - particularly yummy with my berry coulis and enjoy!

Yoghurt, fruit and granola is my favourite healthy combo - tip: use the other half of the banana chopped on top! My personal favourite topping is my berry coulis, a mixed berry sauce that is to-die for on these bad boys!
