Green Goddess Kale & Brazil Nut Pesto

Happy Monday everyone! Today I am sharing my super easy recipe for Kale & Brazil Nut Pesto, this delicious blend is full of great ingredients and is the simplest thing to make. Pesto sauces you buy in the supermarket tend to have loads of fat and salt packed in to them and aren't fresh at all. Making your own takes minutes and tastes so much fresher! This pesto is made with kale and brazil nuts to give it a superfood boost. I usually dislike kale but it is lovely in this pesto and it makes it FULL of folate, vitamin K, vitamin A, iron and a load of other nutrients. The brazil nuts add an insane amount of selenium to this dish, which if you read my 5 Nutrients for Immune Health article, you will know that selenium is essential for a healthy immune system. Simply whizz the ingredients up in a food processor and hey pesto! you have yourself a sauce that can be used for so many things (sorry for the pun, I couldn't help myself). This obviously tastes great with pasta - my favourite is with pappardelle topped with some roasted peppers and tomatoes, but it is also amazing on top of chicken, fish, inside a panini and on potatoes. The options are endless!

Green Goddess Kale & Brazil Nut Pesto

Yields: 4-6 portions (depending how much you love pesto!)

Time: 10 min

 

Ingredients:

3-4 cups chopped kale

1/2 bunch fresh basil (around 1 cup)

1 lemon (juice)

1 cloves garlic

1/3 cup grated parmesan 

1/3 cup brazil nuts

1/4 cup olive oil 

Sea salt to taste - I use about 1/2 tsp

 

Method:

1. Put the nuts in to a food processor and pulse until finely chopped/ground

2. Add all the other ingredients to the food processor and blend for a good 1-2 minutes until you have a nice blended paste

3. Enjoy!
