Baked Apple Oatmeal

Today I have a dish for you that just screams Autumn/Winter, it is full of cozy flavours and is just perfect to share on a Sunday morning, which is exactly what I am doing today! Baking oatmeal is a bit of a revelation to me, it turns a standard bowl of oats in to what is essentially an oatmeal dessert. It gives a crisp, chewy top and a gooey centre with the warmest flavours. I always recommend it to people who say they don’t like oatmeal as it changes the texture and feel of the dish so much! This baked apple oatmeal is filled with apple, raisins, maple syrup and cinnamon and is topped with more apple and a sprinkle of brown sugar. This recipe serves 1, but it is so easy to turn in to a bigger casserole - just double, triple or quadruple the ingredients! You may need to cook it for more like 40 minutes total if you are making one for 3 or 4 people.

Baked Apple Oatmeal

Time: 35 minutes

Serves: 1

Ingredients

70g oats

250ml almond milk (or any milk)

1 tsp maple syrup

1 tbsp raisins

1 apple

1/2 tsp cinnamon

1/2 tsp brown sugar

Method

  1. Preheat the oven to 180 degrees c.

  2. Cut the apple in to quarters and remove the core. Dice 3/4s of the apple in to 1cm cubes. Slice the remaining quarter

  3. In a small, oven-proof casserole dish, mix the oats, milk, maple syrup, diced apple, raisins and cinnamon.

  4. Bake for 20 minutes.

  5. Remove from the oven carefully and arrange the apple slices on top and sprinkle with brown sugar.

  6. Bake for another 10 minutes and enjoy! Careful it will be hot!
