Beautiful Berry Coulis

Here I have a quick and easy recipe to make a delicious berry coulis. This sauce is a delicious topping for so many things, my favourite way to have it is on top of pancakes or waffles, but it also is lovely on porridge and lots of puddings. It is featured in my Pretty in Pink Protein Pancakes to add a beautiful sauce to an already vibrant pink dish! 


Beautiful Berry Coulis

Yield: Around 4 portions

Time: 15 min



200g blueberries

200g raspberries 

1/3 cup water

2 tbsp brown sugar


1. Place all the ingredients in a saucepan and bring to a boil

2. Reduce heat to medium and simmer for 10-15 min, stirring regularly until your berries have mostly broken down and the mixture is slightly syrup-like. 

3. Transfer to a blender and blend until smooth, add more water if necessary to reach your desired consistency.

4. If desired, pass through a sieve to remove the seeds. I keep them in because seeds=fibre!

5. Allow to cool and store in an airtight container for 4 days.
