Peanut Butter Banana Overnight Oats

If you haven't tried overnight oats by now you need to get them in your life asap. I resisted trying them for so long because the idea of cold oats just wasn't doing it for me, boy was I wrong! Possibly the easiest breakfast on the planet that is actually a filling option to keep you going all morning rather than grab and go breakfast bars which will fill you up for about 0.2 seconds. The flavour options are endless and they leave you no excuse not to eat breakfast! I have harped on about why you should eat breakfast before, check out that post for more info, but these are the perfect option for those alarm snoozers out there.

 

Peanut Butter Banana Overnight Oats 

Serves: 1

Time: 10 min

 

Ingredients:

1/2 cup whole oats

1/2 cup almond milk (or any milk)

1 tbsp chia seeds

1 tsp maple syrup 

1/2 tsp cinnamon 

1 tbsp PB fit or smooth peanut butter 

1 small banana 

Any other fruit or toppings

 

Method

1. In a mixing bowl, mix up all of the ingredients except the banana and toppings.

2. Slice the banana.

3. In a jar (16oz mason jars work best), start layering your oat mix with your fruit. I like to do layers of banana slices alternated with blueberry layers.

4. Refrigerate overnight.

5. In the morning I like to then add extra toppings on the top, today I added more blueberries, some peanut butter and some almonds - delish!
