Ultimate French Toast


I have an absolute whopper of a recipe for you all today, my ultimate french toast. I have posted photos of my french toast a few times over on my instagram and have been swarmed with messages asking for the recipe so I am finally going to share it with you all! This isn't just any french toast, this recipe uses thick thick slices of indulgent brioche bread and that is what takes this recipe to a whole new level. It is perfect with just a drizzle of maple syrup and some berries or with some ricotta, strawberries, honey and mint as I am serving it today - perfect for Sunday brunch! Look for brioche loafs in the fresh bakery section and look for one that is nice and chunky and isn't already sliced, you want to be able to cut some nice thick slices yourself! I find it regularly in Whole Foods and Sainsburys. If you can't find brioche bread, look for a nice chunky loaf of white bread from the fresh bakery section, not in a bag! Again, buy it unsliced. To get the best french toast, cut your slices of bread and leave them out for a few hours or overnight before you cook them to let them get a little stale - this makes for the best texture in your french toast!


Ultimate French Toast

Serves: 2

Time: 20 minutes



4 thick slices of brioche or white bread

2 eggs

100ml almond milk

1 tsp vanilla extract

1/2 tsp cinnamon 

100g ricotta 

2 tbsp honey

8-10 strawberries 

5g mint



1. In a shallow bowl large enough to fit a slice of bread, whisk together the eggs, milk, vanilla extract and cinnamon.

2. Heat a knob of butter or coconut oil in a frying pan over medium heat.

3. Dunk a slice of your bread in the batter and flip and dunk the other side. Quickly lay it in the pan and repeat with another slice. I put two slices in the pan at a time. 

4. Cook for 2-3 minutes on each side until it has a lovely golden brown colour and the batter is cooked. 

5. Meanwhile, chop your strawberries and your mint. 

6. Once cooked, plate with a spread of ricotta on each slice. Top with the strawberries, a drizzle of honey and a sprinkle of mint. Get the other two slices cooking while you are topping/plating the first two slices!
