Smoky Sweet Potato Fries

Sweet potato fries are synonymous with summer food in my opinion - they just go perfectly with everything! I consider these one of my specialties, mostly because I eat them so much, but either way, this recipe is delicious. I am a big fan of a sriracha mayo dipping sauce but let's be honest it is easy to eat a lot of mayo that way so I have come up with a much lighter alternative made with greek yoghurt that is actually so much yummier! Sweet potatoes are full of fibre and vitamin A and the smoky flavour on these combined with a crisp skin makes them a real treat.

 

Smoky Sweet Potato Fries

Time: 40-50 minutes

Serves: 2

Ingredients:

2 medium sweet potatoes

1 tsp smoked paprika

1/2 tsp cayenne pepper

1/4 tsp garlic granules

Olive oil

Salt and pepper 

Dipping sauce:

4 tbsp greek yoghurt

1 tsp sriracha 

Squeeze of lemon juice

 

Method:

1. Preheat oven 200c/400f

2. Chop the sweet potatoes in to wedges about the size of your finger (leave the skin on!).

3. Arrange on a large baking tray and sprinkle over some spices.

4. Drizzle over a good amount of olive oil and a crack of salt and pepper.

5. Mix well until the fries are evenly coated and make sure they are spread out on the baking tray.

6. Roast for 30-40 minutes until the fries are browned and crisp. Turn regularly throughout cooking. 

7. Meanwhile mix up the dipping sauce, simply stir the 3 ingredients together and voila!

8. Serve the sweet potato fries with the dipping sauce and enjoy!
