Caramelised Banana Oatmeal


This cozy oatmeal recipe is a flavourful and seemingly complex dish that is surprisingly easy to whip up in under 10 minutes! A great recipe for when you are craving something a bit different but don't want to faff around with a tricky recipe. I came up with this a few days ago shortly after we moved in to our new house when I found myself without a toaster and without many ingredients in the cupboards. I had been surviving on cereal the past few days and was desperate for something exciting, and this is what I came up with! The caramelised bananas are to-die for, so gooey and rich in flavour. The oatmeal has mashed banana in it for some added flavour and the whole thing is topped with blueberries and a drizzle of maple syrup.


Caramelised Banana Oatmeal

Serves: 2

Time: 10 minutes



1 cup (100g) whole oats

2 cups (500ml) milk (any milk works!)

2 ripe bananas 

A handful of blueberries (I love frozen ones!)

2 tsp cinnamon

1 tbsp coconut oil

1 tbsp maple syrup + extra to serve 

1/2 tsp vanilla extract 



1. Add the oats, milk and 1 tsp of cinnamon to a saucepan over medium heat. Bring to a boil and then reduce the heat and cook for 5-10 minutes until they reach the desired consistency. 

2. Meanwhile, mash one of the bananas in a bowl and chop the other in to rounds.

3. Melt the coconut oil in a small frying pan and once hot, add the banana, vanilla extract, 1 tbsp maple syrup and the remaining 1 tsp cinnamon.

4. Fry the bananas for 3-5 minutes until they are golden and fluffy looking.

5. Once the oatmeal is cooked, whip in the mash banana, heat through and divide between bowls.

6. Top with the caramelised banana, blueberries and a drizzle of maple syrup.
