Apple Cinnamon Loaf

Time: 1hr 15min

Serves: 8-10 slices

2 apples

225g self-raising flour

175g butter

175g + 1 tbsp light brown sugar

2 eggs

1 tsp vanilla extract

2 tsp cinnamon

4 tbsp yoghurt

1. Preheat oven to 175c/350f. Grease a loaf tin with butter or coconut oil.

2. Core the apples. Grate 1 1/2 of the apples and finely slice the remaining half.

3. Beat the butter and sugar until soft and creamy.

4. Beat in the eggs, yoghurt and vanilla.

5. Fold in the flour and 1 tsp cinnamon gradually.

6. Fold in the grated apple.

7. Pour half of the batter in to the tin and spread out evenly.

8. Sprinkle the remaining cinnamon and 1 tbsp sugar on top of the batter. Pour the remaining batter on top and spread out. Using a knife, swirl through the batter to create a cinnamon swirl in the batter.

9. Arrange the sliced apples along the top of the batter and sprinkle with a little more sugar if desired - this adds a bronze caramel to the top of the load!

10. Bake for 1 hour until a toothpick inserted comes out clean. If necessary, bake for another 10 minutes until the batter is dry.

11. Allow to cool in the tin then slide a knife around the edge, turn upside down and tap the tin until the loaf comes out. Slice and enjoy!
