Blackberry Frozen Yoghurt

This heatwave has been killing me lately, England is not built to deal with this sort of constant heat and I think the nation might just be melting. All I can think about is cold food and drinks, the thought of putting an oven on is just an instant no. I had a craving for ice cream and realised I had yoghurt and blackberries in the house and so this easy blackberry fro-yo was the result! It only has three ingredients and is the easiest thing to make ever - ideal for everyone's lethargic behaviour in the heat. It has a little honey to add sweetness, but it really has a lovely tart yoghurt flavour that is enhanced by the tart flavour of the blackberries. Blackberries are also coming in to season now and are loaded with vitamin C, antioxidants and fibre!

 

Blackberry Frozen Yoghurt

Serves: 4

Time: 3-4 hours

Ingredients:

1 400g tub greek yoghurt

1 200g punnet blackberries

2 tbsp honey

 

Method:

1. Mash the blackberries roughly in a bowl with a fork until they form a chunky paste.

2. In a tupperware that is suitable for freezing, mix the honey and greek yoghurt.

3. Swirl the blackberry mixture through the yoghurt. 

4. Add the lid and freeze for 1hr 30 minutes. Remove from the freezer, stir again to break down any ice and return to the freezer for another 1hr 30 or until frozen.

5. Remove from the freezer around 5 minutes before serving to soften, then serve using an ice cream scoop. I like to add more blackberries to the top!
