Oatmeal Raisin Energy Balls

Knowing that I was starting work this week, working weird hours and also knowing that I am a #hangry being meant that I needed to be on top of my snacks! So I whipped up these oatmeal raisin energy balls which are a fave grab and go snack of mine (they basically got me through my 3rd year of uni). Loaded with filling oats, peanut butter, raisins and cinnamon, these bad boys will fill you up for hours with some great slow-release energy and fibre! Also they taste like cookie dough so win-win I say!!


Oatmeal Raisin Energy Balls

Serves: 12-14 balls (depending on how big you like your balls)

Time: 5 minutes

Ingredients:

1 1/4 cup whole oats (125g)

1/2 cup smooth peanut butter (125g)

1/2 cup raisins (75g)

1/4 cup honey (4 tbsp)

2 tbsp ground flaxseed 

1 tsp cinnamon 

Method

1. Mix the oats, cinnamon, raisins and ground flaxseed in a large bowl.

2. Add the peanut butter and honey and mix well until it is sticky and starts to clump together. Add a tbsp of water if it needs to be wetter.

3. Roll around a heaped tablespoon in to a ball in your hands and place in to a Tupperware. Continue until you use up the mixture.

4. Refrigerate for at least 2 hours until chilled and set.

5. Either eat them straight out of the fridge or pop them in your lunch bag and eat later as a snack!
